In todays article I am going to teach you how to cook ribs just like they do at competitions all over the country. 1. Start with some good quality baby back pork ribs, fresh if you can, frozen is for the winter. 2. Make sure they are trimmed of any excess fat and gristle. 3.Place the ribs,meat side up in a roasting pan and saeson with some salt and pepper. 4.Pour about an half inch of water into the pan, dont cover the ribs, but just enough to come about half way up the sides of the racks. 5.Add a few black pepper corns, a couple of cloves of garlic,skins still on, and a couple of bay leaves. 6.Cover with foil and bake in a low oven,250 degrees should do for about one and a half to two hours. 7.Remove the ribs and place them on a plate to cool for a half hour or so. 8.Fire up the grill to medium and allow it to heat up, not too hot now. 9.Cook the ribs on the grill, bone side down first and then flip them after about ten minutes. 10.Add your favorite BBQ sauce during the last ten minutes and allow each side to just kiss the heat until the sauce starts to buuble and turn a golden brown. 11.Serve those bad boys up with some slaw or your favorite fixings, you wont need any knives as these ribs will fall off the bone 12. Sit back and enjoy the accolades as your friends beg to know your secret..
